Pastasotto, the new food trend where risotto and pasta meet halfway
Every time you have to make a choice, you’re torn… Pasta or Risotto? Don’t choose between them any longer. The new on-trend food, pastasotto, combines your two favourite foods in a single dish for a moment of pure pleasure for your taste buds.
The latest food trend will probably not make the Italians and risotto purists jump for joy, but it wowed us instantly. It combines the creaminess of a risotto and the texture and taste of pasta and the result is extremely moreish. Not to be confused with one pot pasta! To achieve a perfect result, inspired by risottos, cook the pasta slowly in stock until it is very tender. Your mouth is watering already, we bet!
Don’t worry, you can enjoy a delicious pastasotto today thanks to this simple and tasty recipe. To serve four people, you will need:
- 4 tablespoons of unsalted butter
- 1 tablespoon of fresh chopped garlic
- 150g of spinach shoots
- 300g of the pasta of your choice
- 1 glass of dry white wine
- 25cl of water
- 1 vegetable stock cube
- 80g of grated parmesan
- Salt and pepper
To make the pastasotto :
- Melt 2 tablespoons of unsalted butter in a medium-sized frying pan on a medium flame and fry the chopped garlic in it for about 30 seconds until it has taken on the flavour of the garlic.
- Add the spinach shoots and fry them for 1 or 2 minutes to taste. Take care not to overcook them.
- Once the spinach is cooked, set it to one side.
- Increase the heat a little and melt the remaining 2 tablespoons of butter in your pan.
- Add your pasta and brown them very lightly.
- Add the white wine to the pan, wait until it evaporates, and turns the pasta translucid.
- Add the water and the stock cube and bring to the boil.
- When the water is boiling, reduce the heat and cover the pan. Allow it to simmer for around 15 minutes or until ¾ of the water has evaporated and the pasta is tender.
- Add the spinach and the grated parmesan mix together and season to taste.
- Serve and enjoy!
