Rice is a food staple, which we all have in our cupboards. The only problem is that it can be high in calories.

It is the starch found in rice that makes it high in calories. 200 grams of rice can actually contain up to 250 calories. This is also true of pasta or potatoes which also contain starch and which are known for their high calorie content. To do this, we need to reduce the high starch content of the rice. There is nothing easier: rinse the rice before cooking it to remove some of the starch. When the water becomes cloudy with starch, change the water and repeat until the water becomes clear. The you can cook your rice in boiling water. Add some coconut oil to the water, around 3% of the quantity of the rice, or a teaspoon for each portion of rice. The coconut oil will change the structure of the rice and modify the starch it contains. And there you have rice that contains 50% fewer calories when cooked using this method, which is a great result!

To enable the rice to be modified, you need to refrigerate it for 12 hours after cooking. So it is an ideal method if you want to prepare your meal the day before.
